  • 2 lbs chicken thighs, boneless and skinless, cut into 2-inch cubes
  • 2 tablespoons olive oil
  • 1/3 cup white wine
  • 1 large onion, chopped
  • 4 cloves garlic, minced
  • 1 red bell pepper, diced
  • 2 stalks celery, diced
  • 2 medium carrots, cut into thick rounds
  • 3 tablespoons flour
  • 1/2 teaspoon rosemary (fresh or dried)
  • 1/2 teaspoon thyme (fresh or dried)
  • 1/2 teaspoon dried Italian herbs
  • 1/2 teaspoon paprika
  • Salt and pepper to taste
  • 1 1/2 lbs baby potatoes, peeled and cut into cubes
  • 1 cup sweet peas, frozen
  • 4 cups chicken broth (more if needed)
  • 1/2 cup heavy cream
  • 2 bay leaves
  • 1 tablespoon fresh parsley, chopped
  • 2 tablespoons cornstarch

Instructions to make Chicken Stew Instant Pot:

Easy step-by-step instructions to prepare the healthy and delicious chicken stew instant pot are following:

Step 1: Sauté the Chicken

  • Set your Instant Pot to ‘Sauté’ mode and add the olive oil.
  • Add chicken cubes and sauté them until they’re browned in all directions, as soon as the oil is hot. Get rid of the chicken and put it away.

Step 2: Sauté the Veggies

  • In the same Instant Pot, add the minced garlic, chopped onion, diced celery, diced bell peppers, and carrot rounds.
  • Sauté these veggies for a few minutes until they start to soften.

Step 3: Add the Flavors

  • Add a mixture of flour to the vegetables and stir well so that they’re covered.
  • Now, add the thyme, rosemary, Italian herbs, paprika, pepper, and salt. Stir to combine.

Step 4: Bring It All Together

  • Return the sautéed chicken to the Instant Pot.
  • Add the baby potatoes and frozen sweet peas.

Step 5: Add Liquids

  • Mix in chicken soup and some bay leaves with half the wine.
  • Set the valve “Seal” and pressure cook on ‘High’ for 10 minutes while you close the Instant Pot lid.

  • To make the stew rich and creamy, stir in the heavy cream.

Step 7: Thicken the Stew

  • Mix the cornstarch and a little water in a small plastic bowl, stirring it up into a slurry.
  • To thicken it, add a little bit of the slurry to the stew.
