Sweet Potato Lasagna – Easy and Yummy Recipe

Healthy Vegetarian Mexican Lasagna

Ingredients of Sweet Potato Lasagna:

  • 3 tablespoons of olive oil
  • 1 small onion, diced
  • Kosher salt and freshly ground black pepper
  • 2 cloves garlic, minced
  • One 28-ounce can of whole peeled tomatoes
  • Two 10-ounce boxes of frozen chopped spinach, defrosted
  • 1 pound mozzarella, grated
  • 2 pounds of ricotta cheese
  • 1/2 cup grated Parmesan
  • 1/4 teaspoon grated nutmeg
  • 2 large eggs, lightly beaten
  • Kosher salt and freshly ground black pepper
  • 3 pounds of sweet potatoes (about 3 large)

How to Make Sweet Potato Lasagna :

Tomato Sauce:

  • Put the oil in a big saucepan and set it over medium heat. Just a bit of salt and some pepper into the diced onion. It will take approximately five minutes to cook the onion until it’s translucent.
  • Put garlic in it and cook for 30 seconds only.
  • Put together the peeled tomatoes along with their juice. They’ll be broken down into small pieces with a wooden spoon. Put the sauce in a pot for about 15 minutes, stirring it. You can rub salt and pepper on it if you like.

Lasagna:

  • Set the oven temperature to 375°F (190°C).

Preparing the Sweet Potatoes:

  • Peel the sweet potatoes and slice them into thin rounds, about 1/4 inch thick.

  • In a mixing bowl, mix the defrosted chopped spinach, ricotta cheese, grated Parmesan, grated nutmeg, and beaten eggs. Season with salt and pepper to taste. Mix well to create the spinach filling.

Assembling the Lasagna:

  • In a greased 9×13-inch baking dish, start with a layer of tomato sauce.
  • Add a layer of sweet potato rounds.
  • Spread half of the spinach filling over the sweet potatoes.
  • Sprinkle with a portion of the grated mozzarella.
  • Repeat the layers: tomato sauce, sweet potatoes, spinach filling, and mozzarella. Finish with a final layer of sweet potatoes on top.

Baking:

  • For 45 minutes, cover the baking dish with aluminum foil and bake.
  • Remove the foil and bake for another 20 minutes, or until the sweet potatoes are tender and the top is golden brown.
