  • 1 cup chopped yellow onion
  • ¾ cup chopped celery
  • 3 cloves garlic, minced
  • ¾ teaspoon salt
  • ½ teaspoon ground pepper, plus more for garnish
  • 4 cups of reduced-sodium vegetable broth
  • 1 (15-ounce) can no-salt-added cannellini beans, rinsed
  • 8 cups broccoli florets
  • 1 tablespoon nutritional yeast
  • 1 (5-ounce) package of fresh baby spinach
  • 1 tablespoon grated lemon zest
  • 2 tablespoons lemon juice
  • 1 (5.3-ounce) container of plain cashew milk yogurt

Step By Step Instructions:

Step 1: Sauté the Aromatics

  • Put two tablespoons of olive oil into a big soup pot or Dutch oven, and set to medium heat.
  • In the cooking vessel, add your chopped yellow onion and celery.
  • Sauté it for at least five minutes, or until they are soft and translucent.
  • Sauté for another 30 seconds and add the minced garlic, stirring until it’s aromatic.

Step 2: Season and Cook

  • Season the mixture with ground pepper and salt. Mix well enough to bring together the flavors.
  • Pour in the reduced-sodium vegetable broth and add the cannellini beans. Stir everything together.
  • Add the broccoli florets, fresh thyme leaves, fresh thyme leaves, dried rosemary, paprika, and fresh chopped rosemary. You’ll get a great flavor from those herbs and spices in your soup.
