  • 2 cups Jasmine Rice Uncooked
  • 2 tbsp Coconut Oil
  • 2 tbsp Ginger Freshly Grated
  • 1 tbsp Garlic Minced
  • ½ tsp Salt
  • 2 cups Chicken Broth
  • 1 cup Coconut Milk
  • 2 tbsp Lime Juice Freshly squeezed
  • ½ cup Cilantro Chopped
  • Cashew nuts



  • Soak Jasmine rice in cold or simple water if the water doesn't clear up.
  • Pour 2 tbsps of coconut oil or any oil in a large skillet, then let it warm up for a few minutes.


  • Add fresh grated ginger and chopped garlic in the skillet. Sauté until it's aromatic, creating a rich base for your rice.

Rice and Broth:

  • Add the rinsed jasmine rice to the saucepan, stirring to coat the rice in the aromatic mixture.
