Ingredients:

  • Olive Oil 1/2 tablespoon

Step 1: Prepare the Zucchini

  • Put the olive oil in a pan and cook it at a moderate temperature.
  • Add the zucchini slices, and sprinkle with a little salt and pepper.
  •  Sautee the Zucchini, until it is tender and a little golden. It’s going to take about 5 minutes.

Step 2: Cook the Corn and Gnocchi

  •  As long as zucchini is cooking, you’ll be making corn. It is necessary to cook frozen corn according to the instructions on the package.
  •  Put water into a separate vessel and boil.
  • Cook them according to the instructions on the package by adding Trader Joe’s Sweet Potato gnocchi.
  • It’ll take a couple of minutes at most. When they’re on the surface, they’ll be ready!

Step 3: Mix It All

  •  Mash them together in a large bowl when you cook the zucchini, corn, and gnocchi.
  • Add the fresh arugula to the mix. Arugula adds a peppery kick and some extra greens. Feel free to leave it out if you’re not a fan.
