Ingredients for Potato Noodles:

Noodle Dough:

  • 1 cup of potato starch (You can make it at home using potatoes)
  • ½ cup of hot boiling water
  • 1 tablespoon of vegetable cooking oil

Sauce:

  • 3 cloves of garlic, finely chopped
  • 2 leek scallions, white part and green part separated
  • 1-2 tablespoons of Chinese chili oil
  • 2 tablespoons of light soy sauce
  • 1 tablespoon of vinegar
  • 1 tablespoon of sesame oil
  • ½ teaspoon of sugar
  • 2 tablespoons of cumin powder
  • A pinch of salt to taste
  • 2 coriander sprigs, finely chopped

Step by Step Instructions:

For the Noodle Dough:

  • Start by adding vegetable cooking oil to the potato starch. Stir in the hot boiling water.
  • Allow it to sit for a moment, then gather all the crumbs together to form a ball.
  • Continue kneading the dough for 8-10 minutes until it becomes extremely stretchable, smooth, and without any small bumps. More kneading will result in better dough.

  • Dust your work surface with starch, then flatten the dough and roll it out into a rectangle.
  • Cut the dough into 1 cm thick strips and shape them into longer pieces.

For Cooking the Noodles:

  • Bring a large pot of water to a boil. Prepare a bowl of cold water on the side.
  • Add the potato starch noodles to the boiling water. Cook until they float, then transfer them to the cold water.
  • Put 1 ton of cooking oil in a separate pan, add garlic and a white piece of scallions until it’s aromatic.
  • Add these ingredients in a bowl: soy sauce, cumin powder, chili oil, salt, sugar, corn syrup, vinegar, and seviche seeds.
  • You can add the cooked noodles, stirring for three to five minutes until you get your desired softness.
  • Add a green onion and chopped coriander at last.
