Empanadas Colombianas are a popular snack or appetizer in Colombian cuisine. Empanadas Colombianas are made by filling a thin dough with a mixture of meat (commonly ground beef or pork), potatoes, onions, and various spices. The filled dough is then folded, sealed, and deep-fried until golden brown.

Ingredients
  

For the Dough:

  • 1 ½ cups pre cooked yellow cornmeal (masarepa)
  • 2 cup water
  • 1  tablespoon vegetable oil
  • ½ tablespoon sazon Goya with azafran
  • ½  teaspoon salt

For the Filling:

  • 2 cups peeled and diced potatoes
  • 1 chicken or vegetable bouillon tablet
  • 1 tablespoon olive oil
  • ¼ cup chopped white onions
  • 1 cup chopped tomato
  • ¼ cup chopped green onions
  • 1 chopped garlic clove
  • 2 tbsp chopped red bell peppe
  • ½ pound ground pork and beef
  • ¼ tsp black pepper
  • ½ tsp sazón with azafran
  • ½ tsp salt
  • 2 tbsp chopped fresh cilantro

Instructions
 

Foundation for our empanadas:

  • Get the yellow cornmeal mixed with water until you have a dough that's perfectly smooth, not too sticky and dry.
  • Mix a little vegetable oil into it to create a smooth, soft texture.
  • We'll spice things up a bit now! In order to give the extra punch, make your sazon Goya with azafran and some salt.
  • If you don't have the dough that's easy to play with, you know, the kind that doesn't bother you, give it a good mix.

Preparing the Flavorful Filling:

  • Boil those potatoes until they're all tender and lovely. Set them aside for a minute.
  • In a pan, work your magic with white onions, garlic, and a mix of ground pork and beef until it's all singing in golden harmony.
  • Throw in some chopped tomatoes, green onions, and red bell pepper. Let them join the flavor party.
  • Sprinkle in black pepper, sazón with azafran, and just a pinch of salt – don't be shy!
  • Now, Bring the boiled potatoes back, add a little fresh cilantro. Put a good stir in there, and voila! you have an explosion of flavor!

Assembling and Frying:

  • Grab a piece of that dough and shape it into a circle, your canvas for flavor.
  • Spoon in that flavorful mix right in the center – don't be stingy!
  • Fold that dough over, creating that iconic half-moon shape. Seal the edges with a bit of love.
  • Put some vegetable oil in a pan and let those empanadas cook until they are golden brown.
