Salmon-stuffed avocados are a choice, for a tasty meal that supports weight loss. Salmon contains omega-3 fatty acids, which can enhance metabolism and reduce inflammation while avocados provide fats and fiber to keep you satisfied. Materials

  • 2 ripe medium-sized avocados
  • 6 ounces of cooked salmon (canned or fresh, skinless and boneless)
  • ¼ cup diced red onion
  • ¼ cup diced cucumber
  • ¼ cup diced tomato
  • 2 tbsp fresh lemon juice
  • 2 tbsp  fresh dill or cilantro, chopped
  • Salt and pepper to taste

Instructions

  • Start by preparing the salmon. You can use canned salmon (make sure to drain it well) or cook fresh salmon. If using fresh salmon, bake or grill it until it's cooked through, then flake it into small pieces.
  • Cut the avocados in half and remove the pit. You can scoop out a bit of the flesh to create a larger cavity for the filling, but be careful not to damage the outershell.
  • In a bowl, combine the flaked salmon, diced red onion, cucumber, and tomato.
  • Add the lemon juice and chopped dill or cilantro to the bowl, and gently mix everything.
  • Season the mixture with salt and pepper to taste. Remember that salmon can be naturally salty, so go easy on the salt.
  • Carefully fill each avocado half with the salmon mixture, making sure not to overstuff them.
  • Garnish with additional fresh herbs, if desired.
  • Serve immediately and enjoy!
