  • Put them in cold water, and add a little salt.
  • Put the pot into boiling water, reduce the heat, and bring it to a soft boil.
  • The potatoes should be cooked for around 15 minutes until they are tender enough that a fork can easily penetrate them.
  • After cooking, drain the potatoes and allow them to cool to room temperature.

Prepare the Dressing:

  • In a bowl, combine the Dijon mustard, your choice of vinegar (white wine or apple cider), mayonnaise (or vegan mayonnaise), olive oil, a touch of sugar, and season with salt and black pepper according to your taste.
  • Put those ingredients in a mixing bowl until thoroughly mixed, and the dressing is smooth and delicious.
